Comfort food!

Today i had to make millionaires shortbread for my mums work as they are having a coffee morning tomorrow. So i thought id share with you how it went! :) The recipe below is for a standard 8inch tin, but i actually doubled it. so if you want to make the same amount of me, times by 2! 

My mum usually makes the shortbread so she made it today for me. You start of with 175g of plain flour, 50g of sugar and 125g of butter. Beat the butter and sugar together, then adf the flour! Cook until its firm to touch but not burnt! haha


 Then put 100g of light brown sugar, 100g of butter, 2 tbsp of golden syrup & a 397g tin of sweetened condensed milk (yummm!) in a pan and bring it to the boil over a medium heat. Cook for about 10-12 minutes until it turns a lovely caramel colour, but DO NOT stop stirring or else it will burn!. Take it off the heat and stir in 1 tsp of vanilla extract.


Pour onto the cooked shortbread base and leave to set in the fridge for around 30 minutes! 


Once its cooled and set, Melt 200g of any kind of chocolate you prefer! i used 320g of milk and 130g of dark! 


Then simply pour on top of the caramel and shortbread base. Evenly spread it out, then place in the fridge to chill for around an hour to and hour and a half! Then lick the bowl and spoon! :P


Once chilled Cut to your desired size! Please remember to taste one while serving up. After all you deserve it! ;)


I really hope some of you try this recipe, because these are simply delicious! But please remember i doubled the recipe above to make a tray of that size! Let me know if you decide to make them. :)
